Fried Smelt (you can add the sauce that I made) Prep time: 15 minutes Cooking time: 10 minutes Yields: 4 as appetizer 1 tbsp grated ginger 2 tbsp soy sauce 2 tbsp olive oil annato powder for color 1 pound smelt, cleaned 1/2 cup cornstarch 1/2 tsp seasoned salt ground pepper 1 cup cooking oil 1/2 cup chicken/fish/veg broth or water 1 tsp yellow curry powder dissolved in 3 tbsp water Combine ginger, soy, annato powder, olive oil and smelt and marinate for 10 minutes.
