For two portions: - 2 butterflied chicken breasts - 40g pesto - 20g panko breadcrumbs - 25g grated mozzarella - 10g parmesan - 1/2tsp parsley In a bowl mix together the breadcrumbs, mozzarella, parsley and Parmesan.
